The Witch’s Cauldron and whenever you go in for breakfast, they give you a free green juice/slushie thing. We’ve always tried to figure out what it is, we can definitely taste lemon, and mint. So I thought I’d try re-create it at home. Because, it’s seriously AMAZING.

Doing some research I decided that to make the version I wanted, you will need the following ingredients:

Serves 2

2/3 cup of water (using 1/3 cup at a time)

2.5 tbs of brown sugar

1/3 cup freshly squeezed lemon juice

2 cups ice

2 generous handfuls of mint leaves

Method

Step 1. In a small saucepan, combine 1/3 cup of water with the brown sugar. Heat the water and stir until all of the sugar is melted. Set aside for 5 minutes until the sugar water cools

Step 2. In a blender, combine the sugar water, lemon juice, ice and mint and blend until you have a slushy-like texture. If you want it to be ‘super’ slushy, add more ice until you’re satisfied :)

You’ll want to serve this immediately to avoid it melting, otherwise, store it in the freezer until you’re ready to serve.

This tastes ALMOST as good as the one at The Witch’s Cauldron. It might be a bit sour, but add some bacon, eggs, toast and you’ll be good to go. This also makes for a super refreshing drink in the afternoon, go on, treat yourself – aren’t green juices supposed to be healthy these days *wink wink* Love Megs xo
