Tray

Cupcakes, cupcakes, cupcakes! I love how creative you can get when it comes to these little treats. Well, Louise from Lulu’s Cupcakes and I had a massive baking day. In the spirit of Oktobefest we decided to make some themed cupcakes.

Ingredients

Makes 18 cupcakes.

100g softened unsalted butter
1 cup of castor sugar
2 large eggs
15ml vanilla essence
1.5 cups of plain flour
5ml baking powder
1/2 cup of milk
pretzels to garnish

Icing:

185g softened unsalted butter
2 1/5 cups icing sugar
2 tablespoons milk
orange & green food colouring

Cupcakes
For best results use room temperature butter, milk and eggs.

Preheat oven to 170 degrees Celsius.

Using an electric mixer cream the butter for 1-2 minutes. Add castor sugar a third at a time, beating for 1-2 minutes after each addition. Add eggs one at a time, beating for 1 minute after each addition or until mixture is light and fluffy. Add the vanilla essence and beat until combined.

Add a third of the flour to the creamed mixture and beat on low speed until combined. Add half the milk and beat until combined. Repeat this process. Add the remaining third of the flour with your baking powder and beat until thoroughly combined. Do not overheat as this will toughen the mixture.

Spoon mixture into cupcake tray lined with cupcake papers. Fill each about three quarters full. Bake for 18-20 minutes or until a fine skewer instead comes out clean. Remove cupcakes from the trays immediately and cool on a wire rack for 30 minutes before frosting.

To make the icing:

Whilst the cupcakes are cooling, make the icing. To do this, beat the butter in a bowl until pale, gradually adding the icing sugar mixture and milk, beating consistently until combined.

We split this batch into 2, then added a few drips of green and orange food colouring to each.

We let the icing harden and then topped it off with a pretzel
